Chicken Bean Supreme

Serves: 6-8

6 tablespoons butter or margarine
6 tablespoons flour
1-1/2 cups chicken broth
1/2 cup milk
1/2 teaspoon salt
dash pepper
2/3 cup shredded Parmesan cheese, divided
8 cups fresh cut green or wax beans, cooked, drained
2 cups cubed cooked chicken
1/2 cup bread crumbs

For sauce, melt butter. Stir in the flour until smooth and cook until bubbly and flour turns a blonde color. Gradually add the broth, milk, salt, and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in 1/3 cup of the Parmesan cheese, stirring until melted. Add the beans and chicken; toss to coat. Transfer to a greased 2-quart casserole dish. Sprinkle with the remaining cheese and top with the bread crumbs. Bake at 375 F. for 15-20 minutes, or until heated through and crumbs are golden brown.
