Tofu Tricks
To cut meat costs and boost nutrition, reconsider the marvels of tofu. By freezing tofu before use, it will pass for ground meat easily in recipes and absorb the flavor more than if used unfrozen. Unwrap and drain the tofu before placing it on a plate and freezing until solid. Package in freezer bags for storage. When ready to use, thaw overnight in the refrigerator, squeeze out any liquid, and then crumble as a substitute for ground beef or turkey.
