Preheat oven to 300 degrees. Line two baking sheets with parchment paper. Beat egg whites until foamy. Add cream of tartar; beat just until fluffy. Add the sugar, 2 tablespoons at a time, then add vanilla extract. (This is when it is nice to have white vanilla.)
When all the sugar is dissolved and the mixture is firm, gently fold in chocolate chips and nuts. Use a Teaspoon or piping bag to place the cookies 1 inch apart on parchment paper. Place cookies in preheated oven and them turn the oven off. Leave cookies in oven for up to 3 hours or overnight. Just don’t forget about them and turn the oven on again!
