Cut all fat and sinew from the steak. Cut steak into serving sizes. Mix flour, thyme, oregano, salt and pepper together. Coat both sides of steak pieces with the flour mixture.
In a large skillet, sauté the garlic in oil over medium heat. Turn the heat up to medium high, and brown the flour-covered steak. When browned, add leftover flour to oil. Mix together. Add onion. Cover meat and onion with water. Cover skillet. Turn heat on low and cook for 45 minutes or until tender. You may need to thin gravy a little before you serve it. It is good served over potatoes, noodles, or rice.
