Place the seasoned chicken in a large pot, adding enough water to cover. Bring to a boil. Cover pot, reduce the heat, and simmer the chicken until tender. Remove the chicken from the broth and cool. Reserve the broth. Bone the chicken, cut the meat into pieces, and set aside.
Dumplings:
Mix all ingredients in order listed and divide the dough in half. Roll half the dough very thin on a well-floured surface. Cut the dough into short strips. Set aside. Roll out and cut the remaining dough. Drop the dumpling strips into the boiling chicken broth. Cover, reduce heat, and simmer for approximately 40 minutes. Add chicken pieces the last 15 minutes. Add thickening to the broth if needed.
