Remove crust from bread and slice into fingers. Dip each finger into melted butter and line bottom and sides of a baking dish with fingers. Peel and core apples. Slice. Place in center of bread fingers. Sprinkle apples with mixture of the sugar and cinnamon. Add 1?2 cup water and cover the top with a layer of well-buttered fingers of bread. Sprinkle top with additional sugar. Cover and bake 1 hour in a 350° oven. Serve hot with whipped cream.
Fun Fact: The shoo fly pie is a molasses pie considered traditional among the Pennsylvania Dutch. “Wet bottom” shoo fly pie is most common and consists of a layer of sweet, gooey molasses beneath a crumb topping. In contrast, a “dry bottom” shoofly pie is more thoroughly mixed into a cake-like consistency. Its distinctive flavor and texture is quite alluring to tourists in the Dutch Country of Lancaster County. The song “Shoo Fly Pie and Apple Pan Dowdy” was first performed by June Christy singing with Stan Kenton and his orchestra in 1945. Dinah Shore’s 1946 version of the song was her first top ten hit.
