Preheat oven to 375°. Lightly butter a 13x9-inch casserole. Line with uncooked spinach. Add chicken. Set aside.
Make sauce by melting cream cheese, Cheddar cheese, milk, seasonings, and 2/3 cup Parmesan cheese. (Reserve 1/3 cup of Parmesan cheese for bread crumb mixture.) Blend over low heat until smooth. Pour cheese sauce over spinach and chicken. Combine bread crumbs with melted butter. Add 1/3 cup Parmesan cheese. Sprinkle mixture on top of mixture. Bake uncovered for 30 minutes.
Fun Fact: The song “Yankee Doodle” had its origins in Norwalk, Connecticut. In 1756, a brigade of volunteers assembled at the home of Colonel Thomas Fitch where the young recruits set out to assist the British during the French and Indian War. Fitch’s young sister stuck a feather into the hatband of each soldier as he pulled out on his plow horse. The British, amused by the appearance of the troops, wrote and sang the jingle in mockery. The rest is history. “Yankee Doodle” became the rallying song for the colonial troops during the Revolution and in 1979 became the official song of Connecticut.
