In a small saucepan over medium heat, melt butter with minced garlic. Set aside. Combine crumbs, cheese, and parsley on a plate; set aside. Pound each chicken breast between sheets of plastic wrap to flatten slightly. Dip in melted butter mixture, then coat well with crumbs. Roll each piece of chicken jellyroll-fashion. Place chicken rolls, seam-side-down in a glass 9x13-inch casserole dish that has been coated with vegetable spray. Pour any leftover butter and crumb mixture over chicken. Squeeze lemon generously over entire surface. Sprinkle with paprika. Bake 1 hour, uncovered, in preheated 350° oven.
