Beef Rolls (Bife rolê)

Ingredients

6 large beef round steaks (such as round steak)
1/2 pound bacon
1 clove chopped garlic
2 tablespoons chopped cilantro
1/2 teaspoon thyme
1 teaspoon salt
1/2 teaspoon pepper
1 grated carrot
1 grated onion
1 bay leaf
1 cup beef broth
2 tablespoons vinegar or red wine
cornstarch

Directions:

Pound steaks to flatten and make tender. Size should be approximately 3 by 5 inches. Part cook or partially fry bacon ahead of time and reserve bacon drippings separately. Season beef steaks with garlic, cilantro, thyme, salt and pepper.

Place bacon on top of the steaks and roll up beef and tie with a string or fasten with a tooth pick. You could also roll the bacon and carrots in the beef and roll it up, put in a tooth pick and bake in the oven.

Fry carrot and onion in the bacon drippings. Brown the steaks, turning them.

Add bay leaf, beef broth, vinegar or wine. Turn up the heat until it begins to boil, and then decrease heat and simmer for 45 min. You could also put this into the oven to simmer.

Remove the beef rolls and place on a serving platter— keep warm.

Make a sauce with what is left in the pan. Add 1/2 cup cold water to 1 tablespoon cornstarch. When lightly thickened, pour over steaks and serve with buttered noodles, buttered parsley potatoes and a green vegetable.

VARIATIONS: steak may have a variety of fillings.
__Smoked sausage and greed olives and boiled eggs—grind together these three ingredients and spread over the steaks. Sew or tooth pick shut and cook as above.
__Carrot and bacon.
__Large slice of green pepper.

Sprinkle with bread crumbs and a little Parmesan cheese. In this case you may want to use tomato in your sauce.
