Mix and dissolve yeast in 1 c. water. Mix in 2 c. flour and, salt and water mixture. Mix well.
Add wheat and all purpose fours until smooth, add a little water if to dry. Let rise until about doubled in size and divide into 6 pieces. Form each piece into a ball and roll into flat rounds about ¼” thick.
Bake on bottom of hot Dutch oven 550°F for 5 minutes until barely grown. Remove from oven and cool on cake rack.
TIP: dust a little corn meal in oven to help prevent sticking. Also use a mixer with a dough hook attachment for best results mixing dough.
P.S. Pita bread forms a bubble in the center to make itself hollow to form its famous “pocket”.
