Delicious Gluten-free Crepes

Ingredients

1 cup brown rice flour
3 eggs or egg replacer
1/4-1/2 cup water (The batter consistency should be smooth)
1-2 tablespoon oil
Choose any of following for the topping:
Your favorite berries (rasperberries / blueberries / strawberries /etc)
your favorite nuts or nut butter
maple syrup

Directions:

1. Mix together 1 cup brown rice flour, eggs or egg replacer, oil, and water in a bowl.
2. Pour a small amount of batter in a frying pan, and cook each side throughly.
3. Crepes should be slightly golden brown when done.
4. Top with nut butter, fruit, and maple syrup.
