In an 8 x 8 x 2-inch glass baking dish, mix muffin mix, water, egg and green chilies just until blended. Microwave at 100% power (700 watts) for 6 to 8 minutes or until a wooden pick inserted in center comes out clean. The top of the corn bread will have a slightly moist appearance.
Sprinkle cheese evenly over hot corn bread. Cover with foil and let stand for 1 to 2 minutes or until cheese is melted. Sprinkle with chili powder if desired. Serve immediately.
