Prepare mashed potatoes, or instant mashed potatoes as directed on package add onions salt and pepper to taste. Cut frankfurters almost in half lengthwise spread open. Spoon mashed potatoes on cut surfaces of frankfurters. Sprinkle with grated cheese and parsley (1 teaspoon dried parsley flakes may be substituted). Bake at 400 degrees F. for about 8 minutes or broil until potatoes are hot and cheese is melted.
