Preheat oven to 450°. Coat a baking sheet with non-stick vegetable spray set aside.
Peel potatoes if desired. Cut into 1/4 -inch slices, then cut each into 1/4-inch strips. Place in a medium bowl or pie plate.
In a small saucepan, melt butter. Stir in sage and pepper. Pour over potatoes, tossing until coated. Spread in a single layer on baking sheet.
Bake for 18 to 20 minutes or until browned and tender, stirring occasionally for even browning. Sprinkle Parmesan cheese and, if desired, onion salt over potatoes. Bake 1 minute longer or until cheese is bubbly. Drain on paper towels if desired. Serve immediately.
