In a small bowl, mix mayonnaise, sour cream, ginger, lemon juice and salt until smooth set aside.
In a medium bowl, mix turkey, macaroni, oranges, pineapple, celery and halved grapes. Add dressing and stir until evenly coated. Cover and chill at least 1 hour or up to 24 hours.
Spoon salad into a lettuce-lined bowl. Garnish with clusters of grapes.
