Bake meatballs in a baking pan at 375° for 15 minutes. In a 5-quart dutch oven, combine water and tomato juice. Bring to a boil over medium-high heat. Add bouillon granules, meatballs, mirepoix, pasta, and tomatoes. Return to a boil; reduce heat. Cook, uncovered, about 10 minutes or until pasta is tender. Top individual servings with croutons.
