Tangy Chicken Soup

Ingredients

1 cup coarsely chopped red bell pepper
2 teaspoons chopped jalapeño
2 teaspoons red curry powder
2 tablespoons rice vinegar
2 tablespoons soy sauce
3 tablespoons packed brown sugar
1 (32-ounce) carton chicken broth
2 cups skinned, chopped rotisserie chicken

Directions:

Combine all ingredients except chicken in a large saucepan. Boil, then reduce heat and simmer, uncovered, 5 minutes. Stir in chicken. Cook a few minutes, only until chicken is hot.
