Touch of Tuscany Salad

Ingredients

2 cups torn red leaf lettuce
2 cups torn fresh baby spinach
1 medium yellow or green bell pepper, cut into strips
1/2 cup chopped green olives
1 small red onion, sliced, separated into rings

Tuscany Dressing:
2 tablespoons red wine vinegar
2 tablespoons olive oil
1 tablespoon water
1 1/2 teaspoons garlic salt

Directions:

Toss together lettuce, spinach, peppers, olives, and onion.

Tuscany Dressing:
Combine all in a jar. Cover and shake well. Sprinkle tuscany dressing over salad; toss lightly to coat. May sprinkle with freshly ground black pepper and Parmesan, if desired.
