Wilted Greens ’n Bacon Salad


Serves: 5

Ingredients

4 cups torn, tender fresh mustard and/or baby spinach greens
2 hard-boiled eggs, chopped
2 or 3 green onions, chopped
2 or 3 slices bacon, cooked, crumbled (reserve drippings)
salt and pepper to taste

Directions:

In large salad bowl, mix greens with eggs, onions, and bacon. When ready to serve, heat bacon drippings and pour over salad; toss till well coated. Salt and pepper to taste. Serve immediately.
