Preheat the oven to 350°F. Place the contents of the jar in a large bowl, and stir until well combined. Add the honey, butter, and vanilla, and mix well. Spread the mixture evenly on an ungreased baking sheet. Bake for 10 minutes, stir, and continue to bake another 10 to 15 minutes, or until lightly browned and crisp. Cool completely. Add dried fruit, if desired. Transfer the granola to the jar or another airtight container, and store in a cool dry place.
