Preheat the oven to 350°F. In a large bowl, blend the eggs, oil, and vanilla with an electric mixer set on low speed. Add the contents of the jar, and continue mixing until well combined. Stir in the apples and pecans, if desired. Pour batter into a greased 12-cup (10-inch) bundt pan, and bake for 60 to 75 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool for 10 minutes in the pan, then remove the cake and cool completely on a wire rack. Serve immediately or store in an airtight container for up to 1 week.
