Preheat oven to 350°F.
Spray 3 (8 x 4 x 2-inch) loaf pans with non-stick cooking spray. Mix dry ingredients. Mix wet ingredients. Combine dry and wet ingredients. Beat well. Pour into pans.
Bake 50 to 60 minutes (until a knife inserted in the middle of a loaf comes out clean).
NOTE: The mixture of Featherlight and GF mixes gives this banana bread the correct texture. You may use 5 cups of Featherlight instead, but the bread will be much spongier.
