Preheat oven to 350°F. Grease or line 2 muffin pans (24 muffins).
In a large bowl mix Featherlight mix, xanthan gum, baking powder, baking soda, salt, sugar, cinnamon, and nutmeg. Beat in eggs, applesauce, and oil. Fold in apples and pecans. Fill muffin cups 1/2 to 3/4 full.
Sprinkle muffins with streusel topping. Bake for 20 minutes, or until a knife inserted into a muffin comes out clean.

In a small bowl, blend all topping ingredients.
