1. Peel the radish with a vegetable peeler and cut off the ends, then cut in quarters lengthwise and crosswise into 1/2-inch slices.
2. Combine the garlic, ginger, 2 teaspoons sugar, 1 teaspoon salt, and paprika in a serving bowl and mash together with the back of a wooden spoon. Stir in 2 tablespoons vinegar, the soy sauce, sesame oil, scallions, sesame seeds, and daikon. Let stand for 30 minutes, or as long as 8 hours (if 8 hours, cover and refrigerate).
3. Just before serving, correct the seasoning, adding salt, vinegar, or sugar as necessary, the salad should be highly seasoned.
