1. Combine the wasabi and water in the bottom of a serving bowl and whisk to make a paste. Let stand 5 minutes.
2. Add the vinegar, sugar, soy sauce, salt, and pepper to the wasabi mixture, and whisk until the sugar and salt are dissolved.
3. Just before serving, add the watercress and mustard greens and toss to mix.
