Oysters Michelina

Ingredients

8 medium-sized oysters in shells

Filling:
1 1/2 cups chopped fresh spinach
1 egg
1/2 tablespoon chopped fresh garlic
1/4 cup grated Parmesan cheese
1/2 cup grated mozzarella cheese
------------------------------
Sauce:
1 1/2 cups heavy cream
1/3 cup bay shrimp
1 teaspoon chopped fresh parsley
1 tablespoon butter
1/4 teaspoon chopped fresh garlic
1/4 cup grated Parmesan cheese
paprika

Directions:

Filling:
In a small bowl combine all ingredients.

Sauce:
Combine all ingredients except paprika.

Clean oysters and open shell. divide filling between each oyster and stuff. Place oysters in a sauté pan and add sauce. Sprinkle with paprika and cook over medium heat 7–8 minutes. Sauce will thicken. Serve warm. (Oysters and filling may be prepared a day ahead and cooked in sauce when needed.)
