Serves: 5
Place 1/2 cup shelled, raw pistachios in a small stainless steel (not nonstick) saucepan, with enough water to cover by at least 1 inch, and bring to a boil over high heat. Remove from the heat and set aside to soften, about 1 hour. Drain and place them on a clean kitchen towel. Cover with another towel (or fold the first one over) and rub the towel with your hands. As you do this, the loosened skin will fall off.
