Even ordinary carrots take on a new personality when cooked the Italian way. Their appealing color and sweet flavor complement many meals.
Buy small to medium-size carrots. The oversized ones taste woody. Packaged "baby" carrots are convenient, but I often find that they are waterlogged and lacking in flavor. I don't recommend them in roasting recipes or when you want the carrots to brown. The excess water makes them resistant to browning.
