Of course, panini can be made with a wide variety of fillings, but they are only as good as the ingredients that go into them. Use imported Italian cheeses and good bread for authentic flavor. If using rolls for the bread, pull out the soft crumb in the center so that there will not be too much bread. Don't overstuff panini. Sandwiches in Italy are thin, with a moderate amount of filling--some would even say a scant amount--in proportion to the bread. It works, though, because the ingredients are of such good quality and are full of flavor.
