Serves: 5
Bring about 2 inches of water to a simmer in the bottom half of a double boiler or a small saucepan. Break up the chocolate and place it in the top half of the double boiler or in a small heatproof bowl that fits comfortably over the saucepan. Let stand uncovered until the chocolate is softened. Stir until smooth. Be careful not to let the chocolate get wet, or it may seize, causing its texture to get hard and grainy. If it does, add a little vegetable shortening to the chocolate, allow it to melt, and stir until smooth.
