* Test the temperature of the water or milk for dissolving the yeast with an instant-read thermometer.
* Baking bread on a stone or quarry tiles makes the crust golden brown and crunchy. Place the stone or tiles in the oven to heat at least 30 minutes before adding the bread dough. Place the dough on a floured pizza peel or rimless baking sheet. Slide the dough onto the stone or tiles and bake as directed.
