Though most of us have onions on hand at all times, seldom do we think of onions in anything more than a supporting role with other ingredients. However, large onions are wonderful roasted whole, and small onions are good simmered in a sauce, as they are in Pearl Onions with Honey and Orange (see Vegetables).
When buying onions, try smelling them. Onions that are bruised or turning bad will have a strong odor, while fresh onions smell very mild.
