An ice-cream maker is essential for making gelato. The kind that you put in the freezer compartment is inexpensive and works fine, except that I never have enough room in my freezer to hold it. The type that I prefer is an electric model that works with ice and salt. It is noisy, but I put it in another room and close the door while it is cranking the ice cream. There are several excellent ice-cream makers available for home cooks that require no ice. They do a terrific job of making gelato in a minimum amount of time. The down side is that they are expensive and take up a lot of space. They are worth getting, though, if you like to make a lot of gelato.
