These are the fun foods of Mexico that everyone loves to eat: very familiar ones like nachos, tacos, and quesadillas, plus tortas (Mexican sandwiches), and dozens of antojitos-irresistible finger foods made with both soft and crisp corn and flour tortillas.

To the uninitiated, the various folded and wrapped tortilla snacks made with corn and flour tortillas, can be confusing. So, here's a little primer of several kinds you'll find in this chapter:

Tacos are corn tortillas stuffed, then folded in half. They are usually served soft, but sometimes they are briefly fried to make them crisp.

Taquitos and flautas resemble each other closely: They are stuffed corn tortillas rolled into a cylinder, then fried. Taquitos are sometimes made with very small tortillas. Flautas are sometimes longer (like a flute), made with larger tortillas or with two overlapping tortillas, filled and then rolled into a cylinder. (In this book, the same size tortilla is used for both.)

Quesadillas-true to its name-always contains cheese. The tortillas are either folded in half (similar to a taco), or stacked like a sandwich. Either form is then toasted or fried to melt the cheese.

Burritos are always made with flour tortillas, are bountifully filled, and then one or both sides are tucked in and the tortilla is rolled to enclose the filling. Chimichangas are fried burritos.

Mexico is also known for the fantastic little Mexican snacks based on masa (corn tortilla dough)-such as sopes, chalupas, garnachas, and picadas-in which masa is formed into little tortilla cups or boats, that are crisp on the outside, soft on the inside, and topped with fillings of salsas, meats, cheeses, and other creative, flavorful combinations. Once you learn how to make the tortilla cups, you'll want to sample all the possibilities!

Mexican rolls are put to delicious use for tortas, such as Pork Sandwiches with Tomato Sauce, and Poblano Chile, Beans, and Cheese Sandwiches. The tortas are made with fillings reflecting a variety of regional flavors, and really are some of the best sandwiches in the world.

This chapter also contains recipes for easy dips and spreads and for delicious vegetable, meat, and seafood appetizers such as Fried Potato Chips with Lime and Chili, and Shrimp Cakes with Corn Salsa, to name just two.
