In large glass jar, combine pineapple chunks, sugar, and brandy, stirring well. Cover and let sit at room temperature for 2 weeks, stirring daily.
After Two Weeks:
Combine ingredients and add to first mixture. Let stand at room temperature for 2 weeks more, stirring daily.
After Second Two Weeks:
Add to above mixture; let stand at room temperature for 2 weeks more, stirring daily.
Finally, six weeks from starting time, drain fruit, reserving liquid. The liquid is the starter that will be used in the next step of the recipe. The fruit may be served over the top of ice cream if not used in a cake.
Fun Fact: Because of its popular name, the post office in Santa Claus, Indiana, receives thousands of letters to Santa from all over the world each year. Volunteers known as “Santa’s Elves” ensure each child receives a reply from Santa Claus; this tradition has been around since at least 1914. Every year, the post office also creates a special Christmas pictorial postmark for use during the month of December. This practice attracts mail from all over the world wishing to have the official Santa Claus postmark.
