Bring a large pot of water to a boil; add ribs and simmer, covered, for about 20 minutes. Drain ribs; pat dry with paper towels and set aside. Heat oil in a saucepan over low heat; add onion, celery and garlic. Sauté until tender, about 5 minutes. Add remaining ingredients; simmer for about 10 minutes. Pour sauce into a food processor or blender; blend until smooth and let cool slightly. Brush ribs generously with sauce; grill over hot coals for 5 to 6 minutes. Turn ribs; brush again with sauce and grill for an additional 6 minutes. Bring any remaining sauce to a boil; serve with ribs.
Tip: Look beyond traditional napkins when hosting family & friends. Try using bandannas, colorful tea towels, inexpensive fabrics from a craft store, or for especially saucy foods, use moistened washcloths…they’ll love it!
