Prepare instant mashed potatoes according to package directions.
Preheat oven to 400 degrees.
Press pizza dough into a lightly greased 9 x 13-inch pan. Bake 8 minutes.
Stir half of cheese and half of bacon bits into warm mashed potatoes. Spread potatoes over partially baked crust. Sprinkle green onions, remaining bacon bits, and remaining cheese over potato layer. Bake an additional 10–12 minutes, or until cheese is completely melted. Garnish with sour cream. Makes 6–8 servings.
* If using a pizza crust that covers a baking sheet, prepare 6 servings of instant mashed potatoes instead of 4.
