Ingredients

2 cups torn Romaine lettuce
1 Roma tomato, cut into chunks
1/4 cucumber, peeled, seeded, and cubed
1/4 cup thinly sliced red onion
1/4 red bell pepper, cut into chunks
2 tablespoons sliced kalamata olives
1 1/2 tablespoons Lemon-Herb Dressing (recipe found in Salad Dressings chapter)

Directions:

salad spinner
measuring cups
cutting board
serrated knife, 5-inch
peeler
spoon
chef’s knife, 8-inch
mandoline (optional, for thinly slicing onion)
measuring spoons
medium bowl
tongs

Put all the ingredients in a medium bowl and toss to combine. Serve immediately.
