Preheat a 5-inch non-stick skillet on low heat. Whisk together egg, half & half, salt and vanilla. Stir in pie filling. With kitchen scissors cut cinnamon roll into small pieces directly into egg mixture. Stir to combine. Pour mixture into well sprayed skillet. Cover and cook on low for 8 minutes. Remove cover, turn French toast over, cover and cook for 2 additional minutes. Serve warm topped with pie filling and maple syrup, if desired.
