Cut the squashes in half lengthwise, and remove the seeds and fibers. Put 1 teaspoon butter, 1/2 teaspoon minced onion, and a dash of salt in each half. Cover and bake in 350°F oven for 30 minutes or until tender. Scoop the cooked squash from shells and mash with cream and the remaining 2 tablespoons of butter, nutmeg, and the maple syrup.
Author’s note: Just to be different try adding 1/4 teaspoon ground cinnamon and 1 tablespoon dark brown sugar—wow!
