Veal and Chicken Salad


Serves: 6

Ingredients

1 cup cooked veal strips
1 cup cooked chicken strips
1/2 cup sliced celery
2 medium apples, cubed
6 stuffed olives, sliced
1 teaspoon minced chives
pistachio nut
mixed lettuce greens
salad dressing (preferably a vidalia onion cream)

Directions:

Arrange veal, chicken, celery, apples and olives on a bed of mixed greens. Garnish with chives and a few pistachio nuts. To serve, toss with classic French or sweet and sour dressing.

Author’s note: Any leftover meat or fowl may be substituted for veal and chicken.
