TO MAKE THE APPLE CHIPS
Preheat oven to 200°F.
Thinly slice the apples into horizontal rings, about 1/16-inch thick. Place the apple rings in a bowl filled with 2 cups water and 2 tablespoons lemon juice. Set aside.
Combine the 2 cups water, sugar, and 2 tablespoons lemon juice in a large saucepan over medium-high heat, and cook for 3 to 4 minutes or until the mixture comes to a boil, stirring frequently. Using a slotted spoon, transfer the apples to the saucepan and cook for 1 to 2 minutes or until the mixture comes to a boil. Transfer the apples to a sieve placed over a bowl drain well.
Place the apples on a baking sheet lined with parchment paper or a silicone baking mat. Pat the apple rings dry with a double layer of paper towels. Bake for 1 hour or until the apple rings are dry. If the apple rings are not dry after an hour, turn off the oven and allow them to dry in the oven. The apple rings can be stored in an airtight container for up to 3 days.
