The easiest way to make chocolate shavings is to use large chunks of chocolate broken off of candy bars that are sold by the pound. Candy stores or gourmet shops usually have chunks of chocolate that are already broken, wrapped, and ready for purchase. However, if the chunks are unavailable, all supermarkets sell 8-ounce boxes of semisweet or white chocolate that are packaged in individual 1-ounce squares.
Hold the chocolate in your left hand, and use a swivel vegetable peeler in your right hand to move the peeler toward yourself, pressing it against the side of the chocolate. Continue this process until you have the amount of chocolate shavings you need. Depending on the chocolate, some of the shavings may look like tiny curls, some may be larger, while others may not have any curls. Store the chocolate shavings in an airtight container.
