TO MAKE SAUTÉED PEARS
Melt butter in an 8-inch sauté pan over medium heat. Increase heat to high and add pears, sugars, and cinnamon sauté for 5 to 6 minutes or until pears begin to caramelize, stirring frequently. Add the apple liqueur and cook for 1 minute. Remove the pan from heat and allow the pears to come to room temperature. When cool, transfer the pears and sauce to a plastic wrap--lined plate and freeze for 1 hour.
TO MAKE THE SMOOTHIE
Place the milk, sautéed pears, vanilla, and cinnamon in a blender, and mix on low speed until the pears are pureed. Add the yogurt and continue to mix, gradually increasing the speed, until the mixture is smooth. Pour into cocktail glasses and garnish by inserting two Cinnamon-Coated Fusilli (see Garnishes with a Flourish) upright in each smoothie, if desired.
