Filling
• Preheat the oven to 375°F. Butter the bottom and sides of a 9 x 13-inch glass baking pan.
• Peel and slice the peaches into a mixing bowl. Mix in the stevia extract, date sugar, fruit juice, arrowroot, cinnamon, vanilla, and salt, coating the peaches. Lay the peaches out in the bottom of the baking pan.
Topping
• Combine the flour, salt, stevia extract, and cinnamon in a bowl. Lightly cut in the oil using a fork or your fingers. Rub in the maple syrup until well distributed. (If using stevia concentrate, blend it in with the maple syrup.) Crumble the mixture over the peaches.
• Bake for 40 to 45 minutes. If the top is getting too brown, cover the pan with foil during the last 15 to 20 minutes of baking.
VARIATION: For part of the flour use wheat germ or ground sesame seeds.
