For the center filling: Put walnuts and dates in blender or food processor until they are ground and form a sticky substance. Mix in the lemon juice. Form into marble sized balls. Should make about 50-60. Set aside while you make the dough.
For the outer cookie: Cream butter, agave, flax and water together until smooth. Add in oat flour, flour, baking powder. Mix well. Roll into the same amount of balls as your date mixture made. Flatten each dough ball and wrap it around the nutty date centers. Bake on a cookie sheet at 350 for 14-15 minutes or until cookies are just beginning to turn a golden color.
