In a large bowl combine butter, agave, honey, egg, vanilla, and zucchini. Beat until smooth. Then add the dry ingredients. Mix until well blended. I like just a hint of cinnamon in these. If you are a cinnamon lover increase the amount to 1 teaspoon. Dough should be a bit sticky. If it is too sticky to form into balls add a bit more (equal parts) of flour and oat flour. This recipe makes about 2 dozen medium size cookies using a cookie scoop. Bake at 350 for 12-15 minutes. Watch them closely-if they bake too long they will be dry and crumbly.
