Trim the steaks of any excess fat. Allow to stand at room temperature for 20 to 30 minutes before grilling.
Brush or spray both sides of the steaks with 2 tablespoons of the olive oil. Season with the salt and pepper. Grill the steaks over Direct High heat until the internal temperature reaches 145°F for medium rare, 8 to 10 minutes, turning once halfway through grilling time. Remove from the grill, squeeze the lemon wedges over the top, and drizzle with the remaining olive oil. Allow to rest for about 5 minutes before slicing and serving.
