Yield: 16 Three Inch Pancakes
1. Place all the ingredients in a large mixing bowl, and stir until well combined.
2. Heat a griddle, cast iron skillet, or large frying pan over medium heat. If it does not have a nonstick surface, brush with oil.
3. Drop heaping tablespoons of batter onto the hot griddle and cook 1 1/2 minutes, or until the tops are bubbly and the edges are dry. Using a spatula, turn the pancakes over and cook another minute, or until the bottoms are brown.
4. Serve immediately with your favorite topping.
For a Change . . .
• Try other flavors of applesauce, such as apple-strawberry, apple-apricot, or apple-blackberry.
• Increase the vanilla to 1 tablespoon for stronger flavor.
• Instead of applesauce, use 1 egg, or 2 tablespoons ground flaxseeds and 1 tablespoon honey.
