Chicken Quinoa


Serves: 5
Total Calories: 24

Ingredients

1/2 cup quinoa
1 tablespoon dried chives
1 packet of True Lemon (or 1 teaspoon lemon juice or zest)
1/4 teaspoon ground coriander
1/4 teaspoon ground cumin
1/4 teaspoon paprika
1 (3-ounce) foil packet of chicken
1 cup water

Directions:

AT HOME:
1. Combine everything except chicken in quart size Ziploc freezer bag.

2. Place chicken in separate bag.

AT CAMP:
1. Bring water to boil; add quinoa and spices.

2. Reduce heat and simmer 10-15 minutes or until water has been absorbed.

3. Add chicken.

4. Toss and serve.

Fun Fact: Believe it or not, a particular color that attracts mosquitoes is blue.
